Dealers not only want to make room on their lots for the latest and greatest, but they also want to free up their cash so they can purchase more of the incoming models.
Another reason why the end of the year is the best time to purchase a car is because, in general, not many people are buying. The cold weather combined with money being spent on gifts and other holiday expenses tend to mean fewer buyers scouring car lots.
